What you need
- A tortilla press sized for your usual tortillas.
- Fresh masa or prepared masa harina dough.
- Two pieces of food-safe plastic or parchment.
- A dry comal or heavy skillet and a cloth-lined tortilla warmer.
1. Prepare masa that holds together
Masa should feel soft and pliable, like modeling clay. If it cracks deeply when squeezed, knead in warm water a little at a time. If it sticks to your hands or liner, it may be too wet; let it rest briefly or adjust the dough with a small amount of masa harina if the recipe allows.
2. Line the press
Place one liner on the bottom plate and another on top of the masa ball. Liners reduce sticking and make it easier to transfer the tortilla without stretching it. Use food-safe plastic or parchment that lies flat and does not bunch around the hinge.
3. Portion and press
Start with a small ball and adjust after the first tortilla. Center the ball, close the top plate and apply smooth, even pressure. Rotate the tortilla and press again only if the thickness is uneven. Do not slam the handle or force the hinge beyond its natural stop.
4. Cook on a properly heated comal
Preheat a dry comal or heavy skillet over medium-high heat. Cook the first side until the surface sets and releases, flip and cook the second side, then flip once more briefly. Exact times depend on tortilla thickness and the heat of the surface. Light brown spots and a flexible center are better cues than the clock alone.
5. Keep tortillas soft
Stack cooked tortillas inside a clean cloth-lined basket or warmer. Steam from the stack helps keep them flexible. If they dry out quickly, the comal may be too cool or the tortillas may be cooking too long.
How to care for each material
Cast iron
Do not soak it. Wipe clean, dry promptly and follow the manufacturer’s seasoning instructions. A thin protective oil layer may be appropriate for some models, but use the maker’s guidance rather than a universal rule.
Aluminum
Follow the manufacturer’s cleaning instructions; many aluminum presses are hand-wash or wipe-clean only. Avoid harsh abrasives and do not assume the press is dishwasher-safe.
Hardwood
Wipe clean and dry. Do not soak or leave wet masa on the surface. Use only food-safe maintenance products recommended by the maker.
Common problems
- Cracked edges: the masa is too dry or the surface has dried while you worked.
- Sticking liner: the masa may be too wet or the liner is wrinkled.
- Uneven tortillas: center the masa ball and rotate before a second press.
- No puff: check masa hydration and comal heat; puffing is helpful but not guaranteed.
