Ingredients
- 500 g (about 1.1 lb) fresh nixtamalized corn masa
- 2–6 tbsp warm water, as needed
- ¼ tsp fine salt, optional
- Two pieces of food-safe plastic or parchment for the press
Method
01 · Check the masa
Pinch a small piece and press it between your fingers. It should form a smooth edge without deep cracks. If it feels dry or crumbles, knead in warm water 1 tablespoon at a time.
02 · Knead and portion
Knead the masa for 1–2 minutes until evenly hydrated. Divide into 12–14 balls, roughly 35–40 g each. Keep the balls covered with a barely damp towel so their surfaces do not dry out.
03 · Heat the comal
Preheat a dry comal or heavy skillet over medium-high heat. It is ready when a drop of water sizzles and evaporates quickly; an excessively hot surface can scorch the outside before the tortilla cooks through.
04 · Press evenly
Place one masa ball between two pieces of plastic or parchment. Close the press with steady pressure. Rotate the tortilla and press once more if one side is noticeably thicker. Do not force the hinge beyond its natural stop.
05 · Cook the first side
Peel away the liner carefully and lay the tortilla on the hot comal. Cook about 30–45 seconds, until the surface changes color and releases easily.
06 · Flip and finish
Flip and cook another 45–60 seconds, then flip once more for 15–30 seconds. Look for light brown spots and, sometimes, a gentle puff. Adjust heat if the tortilla dries before it develops spots.
07 · Steam-rest
Stack the cooked tortillas inside a clean cloth-lined basket or tortilla warmer. The trapped steam softens them as the next tortillas cook.
